As a lover of peanut butter and chocolate together, these are my dream cookie! Fudgy, dark chocolate cookies studded with Reese's Pieces candies are perfect for Halloween.
Fudgy Reese's Pieces Cookies
1 cup plus 2 tablespoons all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1/4 cup Reese's Pieces candy
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
In the bowl of an electric mixer, cream together the butter and sugars until very light and fluffy. Add the egg and vanilla; mix well. Add the dry ingredients and mix just until combined (the dough will be stiff). Stir in the candy by hand.
Scoop 1 1/2 tablespoons of dough onto the prepared baking sheet, leaving 2 inches of space between each. Bake for 10 to 12 minutes, until set on top (they will look a little underdone, but will have a perfect fudgy interior). Let cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
