Perfectly seasoned diced flank steak sits on top of fluffy cilantro-lime rice. Toppings include elote corn salad, mexican blend cheese, cilantro-lime crema, shredded cabbage, and pico de gallo. We use the chips as spoons, but you can use a regular spoon if you insist.

Ingredients: Flank steak, chipotles in adobo, lime juice, salt, cumin, vegetable oil, garlic, black pepper. Mexican blend cheese (Monterey jack, medium cheddar, Queso Quesadilla and Asadero cheeses, potato starch, natamycin [a natural mold inhibitor]). Cabbage. Cilantro-Lime Rice: long grain rice, cilantro, vegetable oil, salt, lime zest and juice. Cilantro-Lime Crema: Cilantro, mayonnaise, lime juice, Dijon mustard, garlic, Tapatio. Elote salad: Corn, mayonnaise, Cotija cheese, cilantro, lime juice, chipotle powder. Salsa: Tomatoes, jalapeno, onion, tomato paste, cilantro, lime juice, salt, vinegar, cayenne, garlic, cumin, dried ancho chili pepper, dried chipotle pepper.
